Sicilian Orange Cake

After a few attempts of baking this cake failed, I finally managed to gather all my strength to bake it last Friday. A big round of applause for myself. Hahaha... Dari tahun lepas berangan nak buat tapi Buttercup tu asyik keluar masuk peti je sebab tuan tanah semedang tak ada mood nak membuat kek. Hehehe... Okey, mari tengok resepi. Ingredients:

250g unsalted butter, room temperature [I used salted one since that's what I have in the fridge]
250g castor sugar (reduced to 200g) [I reduced to 200g too]
4 medium eggs (3 large eggs) [I used 4 medium eggs]
Grated orange zest from 2 oranges
270g self raising flour [I combined wheat flour with 1 1/2 tsp baking powder, 1/2 tsp salt and 1/2 tsp bicarbonate soda to make self raising flour]
120ml freshly squeezed orange juice [I used orange juice from 2 grated oranges, about 140ml]

Method:

1. Preheat the oven to 180C. Grease and line a 22cm round cake pan.

2. Using a electrical beater, cream the butter with sugar until light and fluffy

3. Beat in eggs, one at a time, beating well before each addition, if necessary adding a spoonful of flour with the last egg to prevent mixture from curdling.

4. Beat in orange zest. Add the flour all at once and mix well, then slowly mix in the orange juice.

5. Scrape the batter into the prepared pan and bake in the preheated oven for 45-50 minutes or until skewer inserted into the center of the cake, comes out clean. If it starts to brown too quickly, cover loosely with a sheet of lightly greased aluminium foil.

6. Leave the cake in the pan to cool on a wire rack, then unmold and serve.

Kalau guna oven api atas bawah macam aku, bila dah separuh masa membakar, tutup permukaan kek dengan aluminium foil atau tutup periuk untuk mengelakkan bahagian atas kek hangus. Kiranya kalau ditutup, kek akan masak sekata luar dan dalam.
